An ooey, gooey treat


I know what you're thinking: what in the world is that? Well, it's a slice of ice cream cake, which, despite appearances of being partially melted, is actually pretty good. I am certainly not one to boast about my cooking skills, because, frankly, I don't have any. I don't cook (but I'm very thankful that Mark is a wonderful cook!). But I do like desserts, so occasionally when we get a new copy of Food & Family I'll feel inspired to attempt making a dessert.

  • And just in case you're curious, here is the recipe for the cake, which was a big hit on Father's Day. Cole and Mark give it 2 thumbs up.

    Prep time: 15 min
    Total time: 4 hours 15 min (including freezing)

    24 Oreos (or other) chocolate sandwich cookies
    1 pt. strawberry ice cream, softened
    1 pt. chocolate ice cream, softened
    2 cups thawed Cool Whip Whipped Topping
    2 Tbsp. chocolate fudge sauce (I used hot fudge, which explains the melting)

    Line a 9-inch round cake pan with plastic wrap. Place 14 whole cookies around edge of pan. Crush remaining cookies; place crumbs on bottom of pan, reserving 1/2 cup. Spread strawberry ice cream over crumbs; top with 1 c of the whipped topping and remaining crumbs. Top with chocolate ice cream.

    Freeze 4 hours or overnight. Remove from pan by lifting plastic wrap; carefully peel off plastic wrap. Let stand 10 min.

    Top with remaining 1 cup of whipped topping and drizzle w/ chocolate sauce.

    Makes 14 servings.
